Repisode: Cadbury Egg Cupcakes

My boyfriend loves Cadbury eggs. Loves em! So for his Birthday this year I thought I’d try making cupcakes with a Cadbury egg in the centre. I got the idea from Pinterest and just kind of made up my own version.


What I used:
Box of chocolate cake mix
Vegetable oil
24 Cadbury eggs
Cupcake liners
Icing Sugar
Vanilla extract
Marshmallow fluff
Yellow Sugar

One box of chocolate cake mix normally yields about 24 cupcakes. But since I used regular size Cadbury eggs in my cupcakes, I didn’t use as much batter so I ended up with about 30 cupcakes total.

I decided on the regular size Cadbury eggs over the mini ones because really, if you are telling someone that this cupcake has a Cadbury egg in the centre, you want a Cadbury egg in the centre. Am I right? They mini ones just didn’t seem as fun to me. A good tip is to freeze the Cadbury eggs, it helps them to keep there shape when baking. I left mine in the freezer for about an hour and it seemed to work fine.

I mixed up the cake mix and put a dollop of cake batter in the bottom of each cupcake liner. Then I unwrapped the eggs ( so glad they changed the packaging this year, can you imagine peeling the foil off 24 of those things? ) and just laid them in the centre of the cupcakes. I then added more batter, just enough to cover the egg. The batter rises up quite a bit so you really just need enough to cover the surface of the egg. I popped them into the oven and baked them according to the directions on the cake batter box, then let them cool.

For the icing I followed the recipe on the back of the icing bag ( royal icing ) and added 1 cup of marshmallow fluff to give the icing a rich, dense texture. I used a piping bag and tip to apply the icing and added some yellow sugar for a bit of sparkle and colour. I originally wanted some edible sparkles but a tiny container was about 5 dollars and I actually liked the look ( and price ) of the yellow sugar much better.

That was it! They turned and great but be warned, these are really sweet. There is as much cadbury egg as there is cupcake, then topped with icing. So if you aren’t a big sweet tooth these might not be for you but the Birthday boy was a fan so i call them a success!
